Cucumber Mint Yogurt Dip

It is soaring over forty degrees here in Calcutta.So yogurt is the hero of the season.One of my favorite dips to go along with rice,naan,chapatis or any cereals or crackers.

Cucumber Mint Yogurt Dip

Ingredients:

Homemade yogurt: 1 cup

Cucumber: 1,chopped finely

Tomato: 1/2,chopped finely

Mint leaves: 2 sprigs,chopped finely and made into a paste

Green chilli: 1,finely chopped

Red chilli powder: 1tsp

Black salt: to taste

Method:

In a mixing bowl add the chopped cucumber,tomato,chillis,red chilli powder,salt and mint leaf paste.To this add the yogurt.Mix it all.Adjust the consistency using water.If you want it to be runny to be had with rice add  about two tablespoons of water to the mix.Taste and adjust the seasonings as well.Refrigerate it for about 15 minutes before serving.

 

Tabasco Ramen Noodles

Spice the holy Ramen noodles with tabasco sauce and chillis and tomatoes.Quick and easy!

Tabasco Ramen Noodles

Ingredients:

1 Instant Ramen noodle packet

1/2 Tomato,chopped

1/2 Onion,chopped

1 Green chilli,finely chopped

2 tsp Tabasco sauce

1 tsp Cumin seeds,roasted and crushed

1 tbsp Extra virgin olive oil

Salt and black pepper

Method:

Boil the noodles in water with salt until they are half cooked.Put some oil in a wok and stir fry the onion,green chillis and tomato.Add the cumin seeds,salt and pepper.Now add the half-boiled noodles in the wok and stir fry until the noodles are tender.Drizzle tabasco over the noodles and serve hot.
