Soyabean Fried Rice

A healthy version for vegans but with equally good protein content.Uses the soybean nuggets commercially available in market.

Soyabean Fried Rice 

Ingredients:

Steamed Basmati Rice : 1 cup
Soyabean chunks : 1 cup (Soak in boiling water for 10minutes)
Chopped Green Chillies : 2
Salt to taste
Chopped Onion : 1 medium
Chopped Tomato : 1/2 cup
Chopped Capsicum : 1 medium
Red Chilli Powder : 1/4 tsp

Crushed black peppercorns: 6

Ginger : 1/2 inch
Garlic: 4 cloves (make a paste of ginger garlic)
Extra virgin olive oil : 2 tsp

Chopped coriander leaves : 1 sprig

Method :

Prepare the steamed rice.

Take a deep pan and heat the oil. Add chopped onion and fry it till it turns light brown in color.

Fry it and add ginger garlic paste. Keep frying until the paste turns light brown in color. Now add chopped green chillies,capsicum and chopped tomato. Add salt,red chilli powder,black pepper and let it cook until the capsicum is tender.

Toss in the soy chunks and fry them.At last add the pre-cooked rice.Cook for 5-7 minutes so as to combine everything.Garnish with fresh chopped coriander leaves.Serve hot.

Tip: You can always complement the dish my adding tofu.
